How to Make Chicken Pies?

Ingredients:

  • 300 g / 10 oz chicken breast fillet

  • 2 cups / 500 ml / 16 oz chicken stock

  • 1 bay leaf

  • 250 g / 8 oz orange sweet potato, chopped

  • 2 large potatoes, chopped

  • 2 carrots, chopped

  • 2 celery sticks, chopped

  • 1 parsnip, chopped

  • 1 onion, chopped

  • 1 clove garlic, crushed

  • 1 tablespoon cornflour

  • 1 cup / 250 ml / 8 fl oz skim milk

  • 1 cup / 155 g / 5 oz frozen green peas, thawed

  • 1 tablespoon chopped fresh chives

  • 1 tablespoon chopped fresh parsley

  • 1 1/2 cups / 185 g / 6 oz self-raising flour

  • 20 g / 3/4 oz butter

  • 1/3 cup / 80 ml / 2 3/4 fl oz milk

  • 1/3 cup / 80 ml / 2 3/4 fl oz water

  • 1 egg, lightly beaten

  • 1/2 teaspoon sesame seeds

  • salt and pepper

Ingredients:

  1. In a large, deep non-stick frying pan, combine the chicken, stock and bay leaf. Simmer over low heat until the chicken is cooked through.

  2. Remove the chicken from the pan. Let cool to room temperature, then cut into small pieces.

  3. In an empty pan, add in the orange sweet potato, potatoes, carrots and celery. Cover and simmer for approximately 12 minutes or until just tender. Remove the vegetables from the pan.

  4. Place the parsnip, onion and garlic to the pan. Simmer for approximately 12 minutes. Make sure they are very soft. Remove the bay leaf, then process in a food processor until smooth.

  5. Combine the cornflour with 2 tablespoons skim milk. Mix until they form smooth paste.

  6. Spoon over the paste to the processed mixture. Pour the remaining milk over and then return to the pan. Bring the mixture in the pan to a boil and until it becomes thickened.

  7. Preheat the oven to 200C / 400F.

  8. Mix together the processed mixture with the remaining vegetables, chicken and herbs. Season to taste. Spoon the mixture into four 1 3/4 cup / 440 ml / 14 fl oz capacity ovenproof dishes.

  9. To prepare the pastry, place the flour into a large bowl. Rub in the butter with fingertips. Make a well in the center.

  10. Combine the milk with water and add enough to the dry ingredients to make a soft dough. Transfer to a lightly floured surface and knead until just smooth.

  11. Cut the dough into four portions. Roll each out so that it is 1 cm (1/2 inch) larger than the top of the dish.

  12. Brush the edge of the dough with some of the egg and fit over the top of each dish, pressing the edge firmly to seal.

  13. Brush the pastry tops lightly with beaten egg and sprinkle with the sesame seeds.

  14. Bake for approximately 30 minutes, until the tops are golden and the filling is heated through.
