How to Make Bacon, Mushroom and Pea Linguine?

Ingredients:

  • 6 bacon rashers

  • 4 teaspoons olive oil

  • 2 red onions, chopped

  • 4 garlic cloves, crushed

  • 370 g / 12 oz field mushrooms, sliced

  • 2 cups / 310 g / 10 oz peas

  • 2/3 cup / 40 g / 1 1/2 oz chopped fresh parsley

  • 3 cups / 750 ml / 24 fl oz low fat evaporated milk

  • 4 teaspoons cornflour

  • 650 g / 22 oz dried linguine

  • 50 g / 1 1/2 oz Parmesan shavings

Preparation:

  1. Trim the fat and rind from the bacon, then chop roughly.

  2. Heat the oil in a large pan over low heat. Add in the onion, garlic and bacon. Cook while stirring frequently for 6 minutes. Make sure the onion and bacon are soft.

  3. Add in the sliced mushrooms to the pan. Cook and stirring frequently for further 4 minutes. Make sure the mushrooms are soft.

  4. Stir in the peas, parsley and milk to the pan.

  5. In a small bowl, mix the cornflour with 1 tablespoon of water. Stir until smooth.

  6. Pour over the cornstarch to the mixture and stir over medium heat until slightly thickened.

  7. In a large pan of boiling salted water, cook the pasta for approximately 10 minutes or until al dente. Drain.

  8. Pour the hot sauce over the pasta and add in the Parmesan shavings. Serve immediately.
