How to Make Walnut and Green Bean Salad?


Serve: 4



2 lb beans
2 finely chopped small onions
2 garlic cloves
8 tablespoons grated Parmesan cheese
4 tablespoons chopped walnuts, to garnish

For dressing:
6 tablespoons extra virgin olive oil
4 tablespoons white wine vinegar
2 teaspoon chopped tarragon
salt and pepper


  • Trim the beans and cook for 5 minutes in salted boiling water. Drain.

  • Pour some cold water over and drain again.

  • Place the beans, onion, garlic and cheese in a bowl.

  • Pour the olive oil, vinegar and tarragon in a jar with a lid. Season with salt and pepper to taste. Shake well and pour over the salad.

  • Toss the salad to coat. Wrap with plastic wrap and put in the refrigerator for 45 minutes.

  • Remove from the refrigerator. Leave the salad for 15 minutes before stirring gently. Transfer to a serving plate.

  • Place the walnuts in a skillet and toast over medium heat for 3 minutes. Garnish over the salad and serve.
