How to Make Vegetable
Make: 24 tartlets
butter, for greasing
24 pastry shells
4 tablespoons olive oil
2 crushed garlic cloves
2 finely chopped small onions
2 seeded and diced red bell peppers
1 lb chopped ripe tomatoes
2 teaspoons fresh thyme
2 tablespoons torn basil
salt and pepper
Preheat the oven to 400°F.
Grease several baking sheets with butter.
Put the pastry shells on the baking sheets.
Put the oil in a skillet and heat over high heat.
Add in the bell garlic, onions and peppers. Cook until the mixture
Add in the tomatoes, thymes and basil. Add salt and pepper to taste.
Spoon the mixture onto the pastry shells.
Transfer to oven and bake for 4 minutes.
Ready to serve.
