Vegetable Tartlet Recipe

How to Make Vegetable Tartlets?


Make: 24 tartlets



butter, for greasing
24 pastry shells
4 tablespoons olive oil
2 crushed garlic cloves
2 finely chopped small onions
2 seeded and diced red bell peppers
1 lb chopped ripe tomatoes
2 teaspoons fresh thyme
2 tablespoons torn basil
salt and pepper


  • Preheat the oven to 400F.

  • Grease several baking sheets with butter.

  • Put the pastry shells on the baking sheets.

  • Put the oil in a skillet and heat over high heat.

  • Add in the bell garlic, onions and peppers. Cook until the mixture is soft.

  • Add in the tomatoes, thymes and basil. Add salt and pepper to taste.

  • Spoon the mixture onto the pastry shells.

  • Transfer to oven and bake for 4 minutes.

  • Ready to serve.
