Vegetable Gratin Recipe

How to Make Vegetable Gratin?

2 lb peeled and diced mealy potatoes
4 tablespoons milk
1/2 cup butter
3 cups thinly sliced carrots
5 cups shredded green cabbage
2 chopped medium onions
3/4 cup grated cheddar cheese
salt and pepper


  • Place the potatoes in a bowl with salted boiling water and cook for 12 minutes. Drain.

  • Transfer the potatoes to a mixing bowl mash until smooth.

  • Add in the milk, half the butter, salt and pepper to taste and mix until combined.

  • Cook the carrots and cabbage in separate bowls with salted boiling water. Drain.

  • Mix the cabbage with the potatoes. Set aside.

  • In a skillet, melt the remaining butter. Add in the onions and cook over medium heat until just softened.

  • Preheat the oven to 375 degree F.

  • Spread a layer of mash potatoes on the base of an ovenproof dish. Top with onions, then carrots.

  • Repeat until all the ingredients are used up. Top with final layer of potato.

  • Sprinkle the cheese over the top and bake in oven for 1 hour.

  • Remove from the oven and serve.
