Tomato Ratatouille Recipe

How to Make Tomato Ratatouille?


Serve: 8



8 sprays olive oil
2 onions, cut into wedges
6 chopped garlic cloves
2 trimmed and chopped eggplants
2 trimmed and chopped zucchinis
2 seeded and chopped red bell peppers
2 seeded and chopped yellow bell peppers
4 tablespoons tomato paste
5 tablespoon water
6 oz sliced mushrooms
12 oz chopped ripe tomatoes
2 oz freshly shaved Parmesan cheese


  • Heat a heavy-bottom pan. Add in the oil and heat. Add in the onions, garlic and eggplants. Stir while cooking for 5 minutes.

  • Add in the zucchinis and peppers.

  • Mix the tomato paste and water in a bowl and stir until well mixed.

  • Boil the mixture. Reduce the heat to a simmer. Cover with lid and cook for 15 minutes.

  • Add in the mushrooms and tomatoes. Add pepper to taste.

  • Stir while simmer for 12 minutes.

  • Divide the ratatouille equally in 6 warmed bowls.

  • Sprinkle the cheese and serve.
