How to Make Steamed
8 oz green beans
1½ cups snow peas
24 baby carrots
16 baby onions
24 baby turnips
8 thinly pared strips of lemon zest
8 tablespoons unsalted butter
8 teaspoons finely chopped chervil
8 tablespoons dry white wine
salt and ground black pepper
Use a pair of clean scissors or
sharp pen knife to cut out 8 double thickness rounds of waxed
paper, measured at 12 inches in diameter.
Divide the green beans, snow peas,
carrots, onions or shallots, turnips, radishes and lemon zest
into 8 portions.
Place 1 portion each to each of
the round. Add in the salt and pepper to taste and dot with the

Fold over both layers of paper,
then twist the edges of the paper together to seal.
Boil a large pan of water. Then
put a steamer on top.
Transfer the parcels into the
steamer. Cover and steam for 12 minutes.
Remove the parcels from the
steamer and place the parcels on serving dishes.
