How to Make Spiced Lentils with Spinach?


Serve: 6



3 tablespoons olive oil
1 finely chopped onion
2 crushed garlic cloves
1 tablespoon ground cumin
1 teaspoon ground ginger
1 1/2 cup Puy lentils
3 cups vegetable stock
5 oz spinach leaves
3 tablespoons fresh mint leaves
1 tablespoon cilantro leaves
1 tablespoon fresh flat-leaf parsley leaves
lemon juice
salt and pepper


  • Place the oil in a large skillet and heat over medium heat.

  • Add in the onion. Cook for about 8 minutes, remember to stir occasionally.

  • Add in the garlic, cumin, and ginger. Further cook while stirring occasionally until the onion starts to turn brown.

  • Add in the lentils and pour in the stock. Make sure the stock is enough to cover the lentils by 1 inch.

  • Bring the mixture to a boil. Now, reduce the heat and simmer the mixture for 30 minutes until the lentils are tender.

  • Rinse and wash the spinach leaves in cold water. Make sure to shake dry.

  • Chop the mint, cilantro leaves and parsley finely.

  • Add in the spinach and stir until it wilts.

  • Put in the mint, cilantro, and parsley. Season with lemon juice, salt and pepper.

  • Transfer the vegetables to serving bowls. Serve immediately.
