How to Make Spiced
Lentils with Spinach?
3 tablespoons olive oil
1 finely chopped onion
2 crushed garlic cloves
1 tablespoon ground cumin
1 teaspoon ground ginger
1 1/2 cup Puy lentils
3 cups vegetable stock
5 oz spinach leaves
3 tablespoons fresh mint leaves
1 tablespoon cilantro leaves
1 tablespoon fresh flat-leaf parsley leaves
salt and pepper
Place the oil in a large skillet
and heat over medium heat.
Add in the onion. Cook for about 8
minutes, remember to stir occasionally.
Add in the garlic, cumin, and
ginger. Further cook while stirring occasionally until the onion
starts to turn brown.
Add in the lentils and pour in the
stock. Make sure the stock is enough to cover the lentils by 1

lentils are tender.
