Quesadilla Recipe

How to Make Quesadillas?


Serve: 6



2 chopped onions
6 tablespoons finely chopped jalapeno chiles
1 1/2 tablespoons red wine vinegar
8 tablespoons extra virgin olive oil
20 oz canned corn
12 soft flour tortillas


  • Use a food processor to process the onions, chiles, vinegar and 6 tablespoons of olive oil until well processed.

  • Transfer to a large bowl. Add in the corn and stir until well mixed.

  • Put the remaining oil in a skillet and heat over the low heat.

  • Add in 2 tortillas. Cook for another 45 seconds until golden.

  • Divide the chile mixture into six portions. Spread a portion of the chile mixture over the tortillas and fold over.

  • Cook for further 2 1/2 minutes. Remove from the skillet and keep warm.

  • Repeat with the other tortillas and chile mixture.

  • Ready to serve.
