How to Make Potato and Feta Patty?


Serve: 6



1 whole garlic
9 oz peeled and chopped carrots
6 oz peeled sweet potatoes, cut into chunks
3 oz crumbled feta cheese
6 oz trimmed and chopped leeks
1 1/2 tablespoons chopped fresh cilantro
2 teaspoons Tabasco sauce


  • Preheat the oven to 375F.

  • Break the garlic. Roast it in a roasting pan for 25 minutes.

  • Remove from the heat. Let cool. Squeeze out the garlic flesh.

  • Boil the water in a large pan. Add in the carrots and potatoes and cook for 20 minutes.

  • Drain and mash the carrots and potatoes.

  • Mix in the roasted garlic flesh.

  • Add in the feta cheese, leeks, cilantro and Tabasco sauce. Add in the pepper to taste.

  • Cover and chill it for 45 minutes.

  • Shape the sweet potato mixture into 12 small round patties with hands and put on a non-stick baking sheet.

  • Bake in the oven for 18 minutes.

  • Remove from the oven and serve hot.
