How to Make Pesto Potatoes?
4 lb small potatoes
5½ oz basil
4 tablespoons pine nuts
6 crushed garlic cloves
1 cup olive oil
3/4 cup grated Parmesan cheese
3/4 cup Romano cheese
salt and pepper
basil sprigs, to garnish
Boil a pan of salted boiling
water. Place the potatoes in the boiling water to cook for 25
minutes. Make sure it becomes tender. Drain the water.
Transfer the potatoes to a warm
serving dish. Set aside.
To make the pesto sauce, use a
food processor to process the basil, pine nuts, garlic, salt and
pepper for 40 seconds and at the same time adding the oil
gradually until the mixture is smooth.
Transfer the mixture from the food
processor to a mixing bowl. Mix in the grated Parmesan and
Romano cheeses. Stir well and the pesto sauce is done.
Pour the pesto sauce over the
potatoes. Stir and mix well. Garnish with basil sprigs and
