Pecan Beet Salad Recipe

How to Make Nutty Beet Salad?


Serve: 6



5 tablespoons re wine vinegar
5 grated and cooked beets
3 apples
3 tablespoons lemon juice
6 handfuls mixed salad greens
6 tablespoons pecans, to serve

For dressing:
1/2 cup plain yogurt
1/2 cup mayonnaise
2 chopped garlic cloves
1 1/2 tablespoons chopped dill
salt and pepper


  • Sprinkle the vinegar over the beets. Wrap with a plastic wrap and put in the refrigerator for 6 hours.

  • Use a sharp knife to core the apples and slice into a few pieces. Place the apple slices on a plate and sprinkle with lemon juice.

  • Mix the yogurt, mayonnaise, garlic, dill in a bowl. Add salt and pepper to taste.

  • Remove the beets from the refrigerator.

  • Pour over the dressing onto the beets.

  • Add in the apples and mix to coat with the dressing.

  • Arrange a handful of salad greens on each serving plate.

  • Divide the apple-beat mixture into six equal portions. Spoon a portion into each serving plate.

  • In a dry skillet, toast the pecans over medium heat until they turn brown.

  • Sprinkle the pecans over the salad and serve.
