Moroccan Tomato and Red Bell Pepper Salad Recipe

How to Make Moroccan Tomato and Red Bell Pepper Salad?


Serve: 8



6 red bell peppers
8 ripe tomatoes
4 finely chopped garlic cloves
1 bunch of chopped cilantro
salt and pepper


  • Preheat the boiler.

  • On a baking sheet, put the bell peppers. Turn occasionally while cooking under the broiler for 20 minutes.

  • Add in the tomatoes and continue to broil. Keep on turning occasionally while cooking for 10 minutes.

  • Remove from the broiler and let cool to the room temperature.

  • Peel and seed the bell peppers and tomatoes. Slice the flesh.

  • Mix the flesh in a mixing bowl. Add pepper and salt to taste.\

  • Sprinkle with garlic and cilantro. Wrap with plastic wrap and transfer to refrigerator for 2 hours.

  • Drain and serve.
