How to Make Mixed Cabbage
6 oz red cabbage
6 oz hard white cabbage
4 oz green cabbage
4 peeled and grated carrots
2 finely sliced white onions
4 cored and chopped red apples
8 tablespoons orange juice
4 trimmed and finely sliced celery stalks
4 oz drained canned corn kernels
4 tablespoons raisins
8 tablespoons low-fat plain yogurt
2 tablespoons chopped parsley
Cut the outer leaves and central
core from the cabbages and discard. Shred finely and wash with
cold water. Drain.
Place the cabbages in a bowl. Add
in the carrots and onions.
Toss the apples in the orange
juice and immediately transfer to the cabbages. Pour the
remaining orange juice in the cabbages
Add in the celery, corn, and
raisins and mix well.
To prepare the dressing, mix the
yogurt and parsley in a bowl.
Spoon over the dressing to the
cabbage mixture. Stir until the vegetables are well coated.
