How to Make Mixed Bean
2 chopped medium onions
2 chopped garlic cloves
1 diced large carrot
3 sliced celery stalks
7 cups vegetable stock
20 oz canned chopped tomatoes
1 1/2 teaspoons dried oregano
1 cup red wine
22 oz canned mixed beans and legumes
3 diced medium zucchini
1 1/2 tablespoons tomato paste
salt and pepper
In a large pan, put in the onion,
garlic, carrot and celery.
Stir in the vegetable stock,
tomatoes, oregano and red wine.
Low heating the vegetable mixture
until boiled. Cover and simmer for 20 minutes.
Open the cover, stir in the beans
and zucchini into the mixture. Continue to cook for 5 minutes.
Stir in the tomato paste. Add in
salt and pepper to taste.
While stirring, heat through the
vegetables for 3 minutes. Be careful not to boil the mixture.
Ladle the soup into serving bowls.
Ready to serve.
