Mixed Bean Soup Recipe

How to Make Mixed Bean Soup?


Serve: 6



2 chopped medium onions
2 chopped garlic cloves
1 diced large carrot

3 sliced celery stalks

7 cups vegetable stock

20 oz canned chopped tomatoes

1 1/2 teaspoons dried oregano
1 cup red wine
22 oz canned mixed beans and legumes
3 diced medium zucchini
1 1/2 tablespoons tomato paste
salt and pepper


  • In a large pan, put in the onion, garlic, carrot  and celery.

  • Stir in the vegetable stock, tomatoes, oregano and red wine.

  • Low heating the vegetable mixture until boiled. Cover and simmer for 20 minutes.

  • Open the cover, stir in the beans and zucchini into the mixture. Continue to cook for 5 minutes.

  • Stir in the tomato paste. Add in salt and pepper to taste.

  • While stirring, heat through the vegetables for 3 minutes. Be careful not to boil the mixture.

  • Ladle the soup into serving bowls.

  • Ready to serve.
