How to Make Lemon Beans?
3 lb/ 1360 g mixed green beans, fava
beans and pole beans
7 1/2 tablespoons butter
6 tablespoons all purpose flour
2 cups vegetable stock
7 1/2 tablespoons dry white wine
4 1/2 tablespoons mixed herbs, chopped
9 tablespoons light cream
3 tablespoons lemon juice
grated zest of 1 lemon
salt and pepper
Put some salt in a pan of boiling
water. Cook the beans in the boiling salted water for 15
minutes. Make sure they become tender. Drain the water away.
Transfer to a warmed serving dish. Set aside.
Place a butter in a pan and melt
it over medium heat. Add in the flour. Cook for 2 minutes while
stirring constantly. Remove from the heat.
Stir in the stock and wine
gradually to the cooked flour. Return to the heat. Stir while
bringing the mixture to a boil. Remove from the heat.
Add in the mixed herbs, light
cream, lemon zest and juice. Add some salt and pepper to taste.
Pour the sauce over the beans.
Toss well to coat thoroughly.
Ready to serve.
