How to Make Herby
Potatoes and Onions?
4 lb cubed waxy potatoes
18 tablespoons butter
2 red onions, cut into 8 each
4 crushed garlic cloves
2 teaspoons lemon juice
4 tablespoons chopped thyme
salt and pepper
Set a pan of boiling water. Place
the potatoes in the boiling water to cook for 15 minutes. Drain.
Heat a large, heavy skillet over
medium heat. Place the butter in the skillet to melt.
Add in the onion wedges, garlic,
and lemon juice. Cook the mixture while stirring constantly for
Add in the potatoes and mix well.
Make sure the potatoes are coated with the butter mixture.
Reduce the heat. Cover with lid
and cook for 40 minutes. Make sure the potatoes are tender and
turn golden brown.
Sprinkle the thyme over the the
potatoes. Add in the salt and pepper to season.
Transfer to a warm serving dish.
Ready to serve.
