How to Make Herby Potatoes and Onions?

Ingredients:

 

4 lb cubed waxy potatoes
18 tablespoons butter
2 red onions, cut into 8 each
4 crushed garlic cloves
2 teaspoons lemon juice
4 tablespoons chopped thyme
salt and pepper
 

Preparation:

  • Set a pan of boiling water. Place the potatoes in the boiling water to cook for 15 minutes. Drain.

  • Heat a large, heavy skillet over medium heat. Place the butter in the skillet to melt.

  • Add in the onion wedges, garlic, and lemon juice. Cook the mixture while stirring constantly for 5 minutes.

  • Add in the potatoes and mix well. Make sure the potatoes are coated with the butter mixture.

  • Reduce the heat. Cover with lid and cook for 40 minutes. Make sure the potatoes are tender and turn golden brown.

  • Sprinkle the thyme over the the potatoes. Add in the salt and pepper to season.

  • Transfer to a warm serving dish.

  • Ready to serve.
