Goat Cheese Salad Recipe

How to Make Goat Cheese Salad?


Serve: 8



2 torn Iceberg lettuces
several torn radicchio leaves
large handful of arugula leaves
12 slices French bread
8 oz sliced goat cheese

For dressing:
8 tablespoons extra virgin oil
2 tablespoons white wine vinegar
salt and pepper


  • Preheat the broiler.

  • Divide the lettuce, radicchio ad arugula leaves, in equal portion, among 8 bowls.

  • Put the breads on the broiler and toast one side until they become golden.

  • Put the cheese on the untoasted side of each bread and continue to toast until the cheese melts.

  • Combine the olive oil and vinegar in a bowl. Pour over the leaves. Toss gently to coat.

  • Cut each slice of bread into half. Place three halves of the bread on the salad.

  • Toss and serve immediately.
