How to Make Garlic-Stuffed Mushrooms?

8 large portobello mushrooms
8 sprays olive oil
5 crushed garlic cloves
4 shallots
1 cup whole wheat breadcrumbs
few fresh basil sprigs
1/4 cup chopped plumped dried apricots
2 tablespoons pine nuts
4 oz feta cheese


  • Preheat the oven to 350F/180C.

  • Remove the stalks from the mushrooms. Spray the bases of the mushrooms with the oil. Put the mushrooms in a roasting pan with undersides up.

  • Put together the mushroom stalks, garlic, shallots, and breadcrumbs, basil sprigs, apricots, pine nuts, and feta cheese in the food processor. Add pepper to taste.

  • Process for 3 minutes. Spread the mixture on the mushroom caps.

  • Transfer the mushroom caps to oven and bake for 10 minutes. Remove from the oven. Let cool for 20 minutes.

  • Ready to serve.
