How to Make Garlic-Stuffed
8 large portobello mushrooms
8 sprays olive oil
5 crushed garlic cloves
1 cup whole wheat breadcrumbs
few fresh basil sprigs
1/4 cup chopped plumped dried apricots
2 tablespoons pine nuts
4 oz feta cheese
Preheat the oven to 350°F/180°C.
Remove the stalks from the
mushrooms. Spray the bases of the mushrooms with the oil. Put
the mushrooms in a roasting pan with undersides up.
Put together the mushroom stalks,
garlic, shallots, and breadcrumbs, basil sprigs, apricots, pine
nuts, and feta cheese in the food processor. Add pepper to
