How to Make Eggplant Pate?


Serve: 3



1 large eggplant
2 tablespoons extra virgin olive oil
1 finely chopped garlic clove
2 tablespoons lemon juice
salt and pepper
3 crisp breads, to serve


  • Preheat the oven to 350F.

  • Use the point of a knife to score the skins of the eggplant and put it on a baking sheet.

  • Bake for 90 minutes in the oven. Remove from the oven and let cool for 15 minutes.

  • Cut it in half and scoop out the flesh using a spoon. Mash the flesh in a bowl.

  • Add in the olive oil and beat for 30 seconds.

  • Stir in the garlic and lemon juice until well mixed. Season with salt and pepper to taste.

  • Cover with plastic wrap and chill for 30 minutes.

  • Transfer from the refrigerator and serve with the crisp breads.
