How to Make Egg and Leek Mornay?

4 tablespoon butter
8 trimmed and sliced leeks
16 hard-boiled shelled and quartered eggs
4 oz butter
4 oz all-purpose flour
1 1/4 cups milk
2 teaspoons whole grain mustard
4 oz grated cheddar cheese
salt and pepper


  • Place the butter in a frying pan and melt over medium heat.

  • Add in the leeks and cook until soft. Transfer to a baking dish.

  • Arrange the eggs on top. Add salt and pepper to taste.

  • Preheat the grill to high.

  • Melt the 4 oz butter over medium heat in a pan.

  • Slowly add in the flour while stirring until absorbed.

  • Add in the milk and stir until well blended. Keep on heating the sauce until boiling. Reduce the heat.

  • Simmer while stirring the sauce until it becomes thick. Then, add in the mustard and cheese. Stir and mix well.

  • Pour the sauce over the egg-leek mixture. Grill until the sauce bubbling.

  • Remove from the grill. Let cool for 10 minutes.

  • Ready to serve.
