How to Make Couscous with Broiled Provolone Cheese?

1/2 cup chili oil
2 lb provolone cheese
3 1/2 cups hot vegetable stock
2 cups couscous
1/4 cup chopped mixed herbs
2 teaspoons olive oil
4 teaspoons lemon juice


  • Line the broiler rack with foil and preheat to high.

  • Pour over the chili oil to a mixing bowl.

  • Cut the provolone cheese to 1/4-inch slices. Place the cheese in the chili oil and toss gently to coat.

  • Cook the cheese on the broiler rack for 3 minutes on each side until it turns golden.

  • In a large bowl, stir the stock into the couscous. Cover and let stand for 7 minutes.

  • Stir in the herbs, lemon juice and olive oil.

  • Serve the couscous with the cheese.
