How to Make Carrot,
Tomato and Zucchini Frittata?
4 sprays olive oil
3 crushed garlic cloves
2 onions, cut into wedges
4 egg whites
4 peeled and grated carrots
2 trimmed and grated zucchinis
4 chopped tomatoes
2 tablespoons shredded basil, for sprinkling
In a nonstick skillet, heat the

sauté for 6 minutes.
Beat the eggs and egg whites in a
bowl and pour into the skillet to make the base.
Pull the egg mixture from the
sides to the center of the skillet.
Add in the carrots, zucchinis and
tomatoes. Add pepper to taste.
