How to Make Carrot, Tomato and Zucchini Frittata?


Serve: 8



4 sprays olive oil
3 crushed garlic cloves
2 onions, cut into wedges
4 eggs
4 egg whites
4 peeled and grated carrots
2 trimmed and grated zucchinis
4 chopped tomatoes
2 tablespoons shredded basil, for sprinkling


  • In a nonstick skillet, heat the oil.

  • Add in the garlic and onions and sauté for 6 minutes.

  • Beat the eggs and egg whites in a bowl and pour into the skillet to make the base.

  • Pull the egg mixture from the sides to the center of the skillet.

  • Add in the carrots, zucchinis and tomatoes. Add pepper to taste.

  • Cook over low heat until the eggs are set.

  • Sprinkle with the basil. Ready to serve.
