How to Make Bell Peppers and Beans Stir-Fry?

1 red bell pepper
1 orange bell pepper
1 yellow bell pepper
8 oz carrots
8 oz green beans
8 oz snow peas
8 oz asparagus spears
4 celery stalks
6 scallions
4 tablespoons corn oil
2 teaspoons finely chopped ginger
4 finely chopped garlic cloves
8 oz broccoli florets


  • Slice the bell peppers, carrots, green beans, snow peas, asparagus, celery, and scallions and keep.

  • Preheat a wok or heavy-bottom skillet. Heat half the oil in the wok.

  • Add in the ginger and garlic. Stir-fry for 10 seconds.

  • Add in the green beans and stir-fry for 3 minutes.

  • Add in the snow peas and stir-fry for 2 minutes.

  • Add in the carrots, asparagus and broccoli florets and stir-fry for further 3 minutes.

  • Add in the remaining oil, bell peppers, celery, and scallions and continue to stir-fry for 5 minutes. Make sure the vegetables are tender.

  • Add in the salt to taste and serve.
