How to Make Bell Pepper
and Basil Stacks?
4 crushed garlic cloves
4 finely chopped shallots
2 teaspoon olive oil
4 red bell peppers, peeled, seeded and sliced into strips
2 orange bell pepper, peeled, seeded, and sliced into strips
8 thinly sliced tomatoes
4 tablespoons shredded fresh basil
salad greens, to serve
Mix the garlic and shallots in a
bowl. Add in some pepper to taste.
Brush 8 ramekin dishes lightly
with the oil.
Layer the tomatoes with the red
and orange bell peppers in the ramekin dishes.
Sprinkle each layer with the
shredded basil and garlic-shallot mixture.
Cover lightly with plastic wrap.
Use small weights to weigh down and refirgerate overnight.
Take out from the refrigerator.
Remove the weights and run a knife around the edges. Invert onto
